Saurabh Udinia, spent his teenage savouring the myriad flavours that Delhi street food offers. He realized the enormity of Indian food when he tasted regional cuisines from the lunch boxes of fellow students. This boy grew up to be one of India’s youngest, most awarded and accomplished chefs. With the mind of an artist and the heart of a revolutionary, many would call him a force of nature itself. He is changing the very fabric of Indian cuisine and the way the world sees it.

Fortune granted Chef Saurabh his first favour by making him realise his passion at an early age, and he sure made the best of it. He earned his formal education in hospitality from India’s finest hospitality institutes – Institute of Hotel Management, Catering Technology and Nutrition, PUSA, New Delhi (aka IHM, Pusa). He then joined The Le Meridien, New Delhi for his internship and has been unstoppable ever since. “There were days when I did want to give up, but I guess I’m one of those people who might bend but never break.

After having worked with some of the best restaurants and internationally renowned Chefs, he joined Massive Restaurants Pvt. Ltd. as Chef de Cuisine at the age of 26 years. Massive restaurants is a hospitality conglomerate by Mr. Zorawar Kalra, son of Mr. Jiggs Kalra who is also called the Czar of Indian cuisine. Having found the right patrons, Chef Saurabh is at his culinary best. He spear heads the Modern Culinary function at Massive and has Brands like Masala Library, Farzi Café and Masala Bar to his credit.

The chef travels extensively, both for work and pleasure “well my work kind of is my pleasure.” He adds, laughing.

When he is not in the kitchen he can be found watching football and keeping up with the European League. He also has an in depth knowledge and fondness for music extending to and beyond classical jazz and contemporary artists.
